INGREDIENTS
8oz uncooked elbow macaroni
8TBSP butter
3TBSP all-purpose flour
2C whole milk
8oz cream cheese, softened & cubed
1C shredded sharp Cheddar cheese
1C shredded Colby-Jack cheese
2tsp spicy brown mustard
2tsp salt
1½tsp pepper
1tsp garlic powder
½C dry Italian bread crumbs
1lb of boneless skinless chicken (thighs or breasts)

DIRECTIONS
Cut your chicken into chunks & put into your insta-pot. Season with 1tsp garlic powder, 1tsp pepper, 1tsp salt, & 1cp Frank's Hot Sauce, stir. Set to cook for 20 minutes. If you don't have an Insta-pot season chicken & bake in a 350° oven for 25-30 minutes.
Once chicken is done cool for 10 minutes & chop finely either by hand or in your food processor. Mix in ½tsp garlic powder, 1-1½cp of Frank's Hot Sauce, & 2TBSP melted butter.
Prepare a 9x13 pan & press the Buffalo chicken into bottom of the pan. Set this to the side.
Preheat oven to 400°. Cook elbow noodles as box instructs.
Then melt 4 tablespoons butter in a large pot. Mix in flour until smooth. Add milk slowly & bring it to a boil. Stir consistently on a med-high heat for 3-4 minutes.
Reduce the heat to medium & add the cream cheese, mix til smooth. Then add remaining cheeses, salt, pepper, & mustard. Mix until cheese sauce is smooth.
Add well drained elbow noodles to the cheese base & mix thoroughly.
Layer the mac & cheese over the Buffalo chicken in the pan.
Melt 2TBSP of butter & mix into the bread crumbs. Spread over the top & cook uncovered for 20-30 minutes.
Let rest 10 minutes before serving.

TIPS
Use glass baking dish for best results.
Fiesta cheese can be used in place of Colby-Jack.
Crumbled Candied-Bacon also goes well on top instead of bread crumble.
Consider a double batch
Chicken can be omitted
BBQ sauce can be used in place of Frank's Hot Sauce.
